Last night I was not a mother, I was a horrifying fire breathing zombie dragon!
A mixture of severe tiredness (due to Miss 1’s teething), exhaustion, PMS and the fact that there was NOT ONE BIT OF CHOCOLATE in my whole household were the main contributors and unfortunately it was my family that copped the brunt of my emotions. I was in complete meltdown mode, like seriously who doesn’t have ANY chocolate in the house!
Thankfully, my internet friends came to my rescue! After posting a mini rant on my Facebook page one of my friends gave me a link to a quick and easy Chocolate Mug Cake! I’ve been seeing these all over the net for a while now but have never actually bothered making one (usually due to the fact that there is ALWAYS chocolate in my house). I was desperate. I needed to put my big girl panties on. Take 3 deep breaths and pray to all the cake gods that this recipe worked and that this exercise wouldn’t end with me curled in the corner of my kitchen in the foetal position, crying haha.
The cake gods pulled through! And I created a concoction that provided me with enough of a sugar rush to allow my family to live! So, because I am such a good internet friend I wanted to share this recipe with you. I hope that it provides you with the sweet rush it gave me haha!
You will need:
- 1 coffee mug
- 4 Tbsp. plain flour
- 4 Tbsp. sugar (I used white sugar)
- 2 Tbsp. cocoa (I didn’t have cocoa so substituted with drinking chocolate)
- 1 egg
- 3 Tbsp. milk
- 3 Tbsp. oil
- 1/2 Tsp. vanilla
- 1 teaspoon peanut butter (optional or you can add choice chips or whatever you want!)
- Add dry ingredients to mug, mix well with a fork.
- Add egg, mix thoroughly.
- Pour in milk, oil and vanilla, mix well.
- Push a dollop of peanut butter into the centre of the batter.
- Put mug into microwave and cook for three minutes. Allow to cool for 2 minutes.
TA-DAAAAA there you have it, a sweet, sweeeeet PMS buster.
The second best thing that can come out of a mug (coffee is the best thing, OBVIOUSLY). Also because eating cake without icing is NO FUN, I smothered mine in custard. Ice cream, chocolate syrup or anything you have that’s delicious will also work.
